Wild garlic pesto
As an aperitif toast, on pasta, with fresh goat's cheese: this pesto will awaken your taste buds!

80 grams of wild garlic (leaves) |
30 grams of grated parmesan |
30 grams almond powder, or whole almonds or pine nuts |
4 centilitres olive oil |
1 pinch of salt or fine salt |

Let's get started!
- Place the wild garlic leaves in the food processor and blend them coarsely.
- Add the almond powder, parmesan, half the olive oil and blend again.
- Add the remaining olive oil while keeping the blender running. You should get a smooth mixture. If not, add more olive oil.
- Add salt and pepper and pour into a jar. You can keep it in the fridge for a few days.
